The other side of oats (Meatless Monday)

It’s no secret that I love oatmeal- you can easily gather that from the name of my blog. And I’ve been a lover of all things oats since way back- long before oatmeal was trendy and cool (seriously, when did that happen??). But last night I discovered a whole new side of oats: the savory side.

Just when I thought I couldn’t love oatmeal anymore, this happened:

Oh yes I did.

As I was preparing dinner last night, Greg came in the kitchen and asked “what’s that you’re cooking?” I said “it’s oatmeal!” I think his heart sank a little. Greg is not a lover of the oats. I know, I don’t get it, but he says he’s not (even though I’ve seen him scarf down quite a few bowls of oatmeal over the years). I told him to just be open-minded and he might be surprised.

Honestly, I was a little hesitant myself. I don’t know why, but the thought of savory oats just does not appeal to me. I never would have even thought about it if Amanda had not suggested that I check out Angela’s recipe for them.
I looked over her recipe, and I was intrigued. And Angela knows good food- and she stated that these oats were amazing… she wouldn’t lie, right?

I followed her recipe pretty closely, but doubled it for two people and made a few minor substitutions/additions.

Ingredients:

1 c multigrain oats

1.5 c water

1 c unsweetened almond milk

2 T nutritional yeast

3 sun-dried tomatoes, ground in the food processor

3 large white mushrooms, chopped

1 T butter (the only thing that keeps this recipe from being vegan)

a few dashes of tumeric

1/3 salt-free vegetable bullion cube

dash of cayenne pepper

salt + pepper to taste

I combined all of the ingredients in a pot and brought it to a boil, then reduced the heat to low and let it cook for about 10 more minutes, stirring often.

After dividing the oats into two bowls, I added the following toppings:

sliced avocado

black beans

salsa

a few Guiltless Gourmet tortilla chips, crumbled overtop

Greg and I both really enjoyed this meal. It was one of those dinners that just kept getting better with eat bite! I can think of a ton of variations of this dish and will be trying those out in the future. Thanks, Amanda for introducing me to this recipe- and Angela for creating it!

And completely random, but keeping in spirit of the holidays, these were are a few of my seasonal finds last week:

I’m a sucker for any holiday flavor of chocolate, but, I never ever buy milk chocolate. I just don’t really like it- dark all the way for me!! But, I could not resist. It’s pretty good- very gingerbread. It would taste a lot better though if it was dark.

I also spotted these on sale 4 for $5 at Wegmans, and couldn’t resist.

The eggnog is awesome. I cracked open the cinnamon and it’s okay…. haven’t tried the pumpkin yet.
