Another great weekend has come and gone, and I find myself (once again) wrapping it all up on Monday morning. For some reason, I just can’t bring myself to write posts on the weekend. I think that is mostly due to the fact that I can’t bring myself to sit in front of the computer long enough to actually write a post on Saturday or Sunday. I rarely touch my computer on the weekend- and when I do read blogs or check email, etc. it’s usually on my iPad (which I don’t use for blog posts). Luckily though, I do still have “weekend motivation” to take photos, so that I can document anything important that happened. Such as this:
I made these pancakes on Saturday morning after a 60-minute ride on my spin bike (which went by in no time, due to the fact that I was watching Legally Blonde on tv). These may just be the tastiest pancakes I have ever made. The secret ingredient? Cornmeal.
I got the idea for the pancakes from a recipe on Jenna’s blog and then put my own twist on it.
3 T cornmeal (I used Bob’s Red Mill)
2 T coconut flour
1 tsp baking powder
stevia, to taste
pinch of salt
1/3 c liquid egg whites
1/4 c almond milk
Whisk the dry ingredients together in a bowl. Stir in egg whites and almond milk until well incorporated. Add more almond milk if batter is too thick. Cook over a skillet on medium heat.
I topped mine with a few chopped up blueberries and strawberries mixed with 1/2 T agave/maple syrup blend (nuked in the microwave for 40 seconds) and a little bit of coconut spread. I also made a small smoothie (for extra protein) using a scoop of MRM Rich Vanilla Whey Protein, 2 strawberries, some ice and water. Awesome way to start the morning!
After breakfast I did some grocery shopping (alone- it drives Greg crazy to go shopping with me) and then came back home for a quick lunch before heading out again. This time Greg and I left the house together, along with the dogs to the self-service dog wash! The boys were in desperate need of a bath!
The boys generally cooperate when getting bathed, but they don’t like it very much. Don’t be fooled by Lance’s expression- he was not having a fun time (and it doesn’t look like Greg was either!).
I tried to take some photos of the handsome, clean dogs later on, but they were not really up for posing. I caught them sitting and staring at each other (which was just weird!).
Then Greg started waving his finger around above my camera and got their attention
And eventually Jackson jumped up into Greg’s arms.
On Saturday night we cooked a nice dinner at home and I enjoyed a glass of this (the bottle on the left)!
I’m a big fan of Bethenny’s SkinnyGirl margaritas, and figured the cosmo might be just as good (and it was!). She has a sangria too, which I also want to try. Oh yeah, she’s also launching a line of “Skinnygirl wine,” although I think wine is already pretty low in calories compared to many other alcoholic beverages…
Though the cocktail was pretty good, given the choice between that and kombucha… I’d take the kombucha.
After dinner we watched the movie Crazy Stupid Love. I’m a big fan of Steve Carrell (and many of the other actors in the movie) and I have to admit- I think it was the first movie I’ve ever seen Ryan Gosling in. He was great!
Sunday morning was awesome. I taught my regular 8:30 am spin class, but also subbed for Bodypump at 9:30. I have to admit- I was just a little nervous because I have never officially taught release 80 (which has been out for over a month) and I’m still new to teaching Bodypump in general. I also don’t have my “own” class yet, so I just sub every now and then. I was riding the high from a great spin class and my nerves quickly went away as soon as I stepped foot in the exercise studio. A number of members were in the class that knew or recognized me and were happy to have me there to teach! I have to say- this was the BEST Bodypump class that I have ever taught. I felt super confident, made a few jokes (which people actually laughed at) and my energy, choreography and cues were SPOT ON. The class had so much energy and was so vocal and gave it their all- it was just such an awesome group. After class, a bunch of the members thanked me for a great class, which is always something that instructors love to hear. I literally floated out of the gym- I just felt SO good. I love, love LOVE being a fitness instructor and just wish I could make a full-time job out of it.
I came home, showered, and made myself a huge smoothie before Greg and I headed over to my mom’s to visit for a bit. When we got back home, our plan was to do absolutely nothing for the rest of the day. Between my teaching two classes and Greg moutain biking all morning, we were both pooped. A day on the couch was definitely in order.
I was a little productive though- I did make some hummus.
I just followed the recipe in the Vitamix cookbook: chickpeas, sesame seeds, lemon juice, garlic, olive oil, salt and cumin. Tastes perfect every time!
We also cracked open one of the beers that we bottled last week. We were told to check one after a week to see how it was tasting. This bottle was the last one of the batch, so it had all of the sugars and sediments in the bottom.
I figured that I could just put it through a strainer to get the liquid out, but when I opened it up, it pretty much exploded all over the place. All of the sugars increased the carbonation, so we were left with a microscopic amount of actual beer to taste- not enough to really judge the taste upon. That’s okay though- we have about 1,000 other bottles to taste (and we’re going to wait a few more days for that).
For dinner, Greg grilled a grass-fed top sirloin steak from Hedgeapple that he had let marinate in a mixture of Bragg’s, balsamic vinegar and pepper overnight. I sliced mine up and put it on top of a salad, which was incredibly delicious and filling. I had my usual cup of green tea after dinner, along with one of these…
That’s 40 calories of pure goodness right there: one Girl Scout Thin Mint. Greg bought a couple of boxes from a girl in the neighborhood, but kept them up in his office where he could devour them all day long (and uh, not gain a pound of course). Girl Scout cookies don’t do much for me- but I did want a Thin Mint. And just one was enough to get my fix- I’d take homemade cookies any day of the week over anything from a box.
Another wonderful weekend come and gone… and once again I’m counting down the days until the next one!
