Weekend Highlights [+ KIND Giveaway Winner]

Another great weekend wraps up… and I just need to survive one more week of the school year. Think I can do it?? I hope so.

Saturday morning began in the best way possible- sleeping in, a good breakfast, and a trip to the farmers market. Here’s this week’s haul:

Spinach, kale, tomatoes, blueberries, strawberries, asparagus, squash, broccoli, SUNFLOWERS and doggie bones

We bought the dog bones from some local people who have a small doggie treat business, and they had this lovely girl as their mascot!

We had planned on going hiking Saturday morning, but it was too wet and muddy from all of the rain the night before, so we took the dogs on a nice long walk instead. The weather was PERFECT! We took the boys back home afterwards and set out to run some errands- including buying a game of Yahtzee at Target. :) We also bought some curtains at Bed Bath & Beyond, since I’m motivated to finally start decorating our house a bit 1.5 years after moving in! We hung them up when we got home, and I also finally put some of my photographs in frames (which have yet to be hung…).

I’ve printed out a bunch of photographs that I’ve taken in Colorado, Washington and Oregon and want to put them up on our walls- I’m just not good at deciding exactly where that will be.

I had picked up some Applegate Organic turkey hot dogs at the store earlier in the week, and that’s exactly what I wanted for dinner. It was perfect weather for dining on the patio!

I like tomatoes, onion, relish and LOTS of mustard on my dogs. :)

We watched a DVD and lounged around on the couch for the rest of the night. So did this guy.

Sunday morning started bright and early with a Tabata workout before teaching spin class. This was my second time teaching on the new bikes, and I am still completely in love with them!

We went out to hike in the early afternoon- hoping to go the Appalachian Trail, but opted for a shorter and closer-to-home trail since we were a little pressed for time. I’ve been dying to go out and see the Moutain Laurel ever since I heard they were in bloom last week. They are everywhere on the trails around here, and it’s just so cool to hike through them. Sadly, when we got the trail, we saw that they are already almost gone. The storms we had last week must have blown most of them away. :(

Regardless, our little hike was still pretty great!

Our friends Justin and Matt came over with their dog Rudy later in the day, and the dogs all played together. I tried to get a photo of the three of them, which is always a challenge.

We made a super easy and quick dinner of grilled salmon, Japanese sweet potato and salad

Justin said that he had never tried kale, so I quickly chopped some up and sprinkled it with nooch to roast in the oven. He and Matt both loved it!

It was such a beautiful day, but right after we finished eating the sky started getting dark and it began to rain.

And five minutes later, it was sunny again! This weather lately is just so odd.

    At my co-op, I bought citric acid in bulk for my cheese making, and have a ton left over. So, Ive been experimenting with it, and discovered that it is DELICIOUS mixed with a little salt and sprinkled on roast kale! I wonder what would happen if I also mixed in a little yeast….
