Fitmixer [Orange-Vanilla With Chocolate-Orange Frosting] Cupcakes

I’m in the middle of a crazy busy week- so this post promises to be short. I gave you a little teaser of some rockin’ cupcakes that this non-baker made on Monday, so I’m back to share the recipe with you today!

I wanted to make a cupcake using fitmixer products that I could share with the other participants of the bootcamp, since we all have a huge supply of the protein powders. I posted this recipe on the fitmixer bootcamp blog (which is for the participants to read) and can’t wait to hear if anyone tries them out! My recipe uses two different fitmixer products. I’m not sure how they would turn out with any substitutes- but you’re certainly welcome to try! The fitmixer vanilla protein powder is super vanilla-y and taste like cake batter (which is what gave me the idea to make cupcakes with it!). Alright, onto the cupcakes…

I attempted to make a batch of these cupcakes last weekend, and they turned out horribly wrong. I gave it another shot on Monday- and they turned out perfectly! Let me preface this recipe by saying (again) that I am not a baker. “Real” bakers probably look at my recipes and laugh! While I love to cook, baking in general does not interest me. I hate measuring things and following recipes to a “T” – so my attempts at baking usually end in disaster. These cupcakes were certainly an exception.

I present to you: orange-vanilla cupcakes with chocolate-orange frosting. Doesn’t that sound good?

I made a (very) small batch, since I wasn’t sure how they would turn out. You could certainly double or quadruple this recipe for a larger batch!

The Fitmixer (orange-vanilla) Cupcake (makes 3 cupcakes)

1 scoop fitmixer vanilla protein powder (NOT fitmixer slim)

1 T coconut flour

3/4 tsp baking powder

pinch of salt

1/3 c unsweetened almond milk (or other milk)

2 T liquid egg whites

8 drops NuNaturals orange liquid stevia (or 1 tsp orange extract or orange zest)

1 tsp coconut oil

Pre-heat oven to 350. Line a cupcake tray with 3 cupcake wrappers. Whisk the dry ingredients in a bowl to remove any lumps from the flour. Stir in the wet ingredients and mix until well incorporated. The batter should be somewhat thick, but runny- like cake batter. Divide the batter into the 3 cupcake wrappers and place in the oven on the middle rack. Bake for 18-20 minutes, or until completely cooked through.

Chocolate-orange frosting (for 3 cupcakes)

1 scoop fitmixer slim chocolate

1/2 tsp orange extract

tiny bit of water

Place 1 scoop of the powder into a small bowl. Add in the orange extract. Add a little bit of water- just a small spoonful at a time- and stir. You want the consistency to be thick- and it doesn’t take much water at all. Divide equally to spread on top of the three cupcakes

Nutritional stats:

For 1 cupcake (without frosting): 98 calories, 3.5 g fat, 6 g carbs, 3 g fiber, 13 g protein (!!)

Frosting for 1 cupcake: 30 calories, 1 g fat, 6 g carbs, 2.5 g fiber, 1 g protein
