Friend Date + [Life + Running Giveway Winner]

How are you all on this lovely Wednesday? Once again the humidity is low, the sun is shining and the weather is just about perfect in Maryland. I really can’t complain! Well, yes- I can a little bit. My body is sore and tired. And my stomach feels like a bottomless pit! I don’t know why, but all of that teaching yesterday morning just really wiped me out! I slept a good 8 hours, but I feel like I need about 8 more. I took on a few extra classes for the next few weeks, because I’ll be going on vacation after that and will miss a bunch then. I just need to tough it out until then…

I started off the day with a good stretching session. I was tempted to do today’s fitmixer bootcamp workout, but I’m teaching 2 classes in the afternoon and don’t want to overdo it. Sometimes you just have to listen to the ol’ body!

Last night was fantastic! I met up with Ashley for a dinner date at Uncle Julio’s in Gaithersburg. I’m so glad that she moved to Rockville, because it’s definitely a lot closer than Northern Virginia!

I had never been to this restaurant, but suggested it since we both love Mexican food so much. I wasn’t planning on getting a drink, but then I saw this:

I am a total sucker for a “skinny” version of any cocktail- and the Guavarita sounded really good…

Let me tell you- it was beyond good. This was the tastiest 130 calories I had all day!

We split a garden salad and both got tacos with soft corn tortillas. Once I saw fish tacos on the menu, I knew that’s what I wanted. They are a big weakness of mine!

They came with a side of lovely black beans

It was so nice to sit out on the restaurant’s patio and talk (and talk and talk!) while we ate. I think we were there for at least two hours! We have so much in common, and can really talk about anything for days on end- and I love that! Ashley’s getting married in a week and half (!!) and it was really fun to hear her talk about all of the details. I know that her wedding will be a blast, and I can’t wait to celebrate with her! It’s funny to think that the next time I see her, she’ll be in her wedding dress!

    There’s nothing like awesome friend dates. I had one with my friend last week over some super delicious tea. She’s getting married in a week and a half – so crazy and so exciting!

  2. I LOVE friend dates!! And yummy beans and tacos on the side are ALWAYS a plus.

    YES to the comment about listening up that body. Teaching a lot of classes can easily wipe ya out and cause burn out (I sure do know the feeling!), so stretching, sleeping, and foam rolling are SUPER important! Have fun later today at class :)

  3. I used to live near the Uncle Julio’s in Chicago – every time I ran by there, the smell of the grilling and chips would make me so hungry!

    That looks like some tasty Mexican. I would be hard-pressed to pick between Mexican and Italian as my favorite. I also love Thai. Anything spicy! (Does “spicy” count as a food culture?)

    Mmm, now Im craving Mexican food and reallyyyy craving margaritas! I love all “food cultures”, and I am super grateful to live in a country where SO many diverse cuisines are readily available (even if some of them are more Americanized than others). Other countries I have visited seem so much more limited that way!

  9. Is that the same Uncle Julio’s as the one in Bethesda, do you know? That drink looks good and the Bethesda one is like 2 blocks from my mom’s house!

    I have to go with some sort of Asian food for my favorite. I know “Asian” is a bit generic, but I can’t decide.

  11. Favorite food culture, that’s a hard one! Mexican is always so simple and fun, but I also love cajun cooking (although not always veg friendly). Do I really have to pick one?! ;)

  12. I will never in my life get sick of Mexican food, I could eat it all day. Corn tortillas & black beans are a staple around here. Glad you were able to chat the night away with a good friend.
