Hey guys! I hope you are having a fabulous weekend and staying cool. It’s wicked hot here, and to keep us on our toes, our AC has decided to die. The whole unit has to be replaced to the tune of $4,000… but I’m trying to look on the bright side. At least the new unit will be much more efficient and our electric bill will be lower! We’re not just a little annoyed that we’ve only owned our home for a year and a half and have to replace this monster already…
But anyway- on to happier things! I’m on my way down to Charlottesville, VA for a quick girls’ trip with my mom! Greg and I visited C’ville back in the fall, and totally fell in love with it. It’s just the right distance from my house to be drivable, but still seem like a pretty decent getaway. In the mean time, I wanted to leave you with a few of my favorite recipes from my fellow bloggers. These are a few of the recipes that I make over and over again, that I pretty much can’t live without. Enjoy!
(All photos are from the author of each recipe!)
I make a variation of this recipe every time I make pancakes, usually just subbing using a different kind of fruit each time. They come out SO fluffy and delicious!
Cauliflower-Crust Pizza by Meals and Moves
I’ve made this recipe 4 times now and LOVE it. It’s not exactly a substitute for real pizza crust, if you’re craving bread, but it’s something different (in a very good way)!
Chili Nutty Tofu by Sprint 2 The Table
This recipe changed the way I prepare tofu completely, and taught me that baking it is best! I can’t even count how many times I’ve made it. It’s definitely a favorite in our household!
Sweet Potato Shepherd’s Pie by Pickles & Honey
I can honestly say that this is one of the best things I’ve ever made. I even brought it to a potluck dinner party once, and everyone was blown away!
Chickpea Cookies by Purple Bird Blog
I haven’t made these in a while… and now I’m wondering why! I’ll have to fix that!
Ba-nilla Buckwheat Breakfast Bake by edible perspective
If I had to choose one blogger’s collection of recipes to make for the rest of my life, hands down, it would be Ashley’s. This is just one of many of her recipes that I love. I hold her responsible for bringing buckwheat back into my life (something that I have special family ties with!).
Have you made any of these recipes? Do you have any “bucket list” blogger recipes to share?
