I’m currently enjoying a little girls’ getaway with my mom in Charlottesville, Virgina. I love it here! I’ll have lots of fun pictures to post and details to report back after I return on Tuesday, but for now- I want to share a recipe that I created a few weeks ago.
I’m a big fan of the chocolate + peanut butter combo (and really, who isn’t?!). The idea of this recipe was born from an avocado- a lonely avocado that was almost past her prime and begging to be used. You see, avocados often go on sale for something crazy like 3 for $2 at MOM’s, and I tend to stock up. I’m a big lover of avocado, but sometimes I just can’t eat them fast enough. I hate to waste food- produce in particular- it actually pains me to throw overripe fruits and veggies away. As I held this poor little soft avocado, I remembered once making an avocado mousse that turned out to be pretty good, and was super simple to whip up. I dragged out my food processor, and this is what I came up with:
Chocolate-Peanut Butter Mousse
1 small, ripe avocado*
1/4 c peanut flour (or 2 T peanut buter)
1 scoop Fitmixer Chocolate Slim
1/4 c Cocoa Powder + 1 T agave nectar (or sweetener of your choice)
2 T chia seeds, ground into a powder**
3/4 -1 c. unsweetened almond milk (or milk of your choice)
1 tsp vanilla extract
Combine all ingredients into a food processors and blend until smooth (about 1 minute). Refrigerate for 2 hours before serving.
*I have also made this same recipe using silken tofu instead of avocado. I think that the avocado version tastes just a little better, but both are really delicious!
**I’m not totally crazy about the texture of chia seeds, so for recipes like this, I usually grind them up into a powder. That way, they just mix right in!
I topped mine with a few peanuts for some extra crunch:
…and it was gone about 10 seconds later.
This is a dessert that tastes incredibly decadent and rich, but is low in sugar, has healthy fats, and is made up of only good things, so you can feel good about eating it! This has quickly become my favorite after dinner treat.
