Happy Fourth, y’all!
I am back in Maryland and am eager to share the details of my quick getaway to Charlottesville- but that will have to wait until tomorrow. Today I’m bringing back a twist on one of my favorite recipes- the protein muffin! Keeping with the patriotic theme, I decided to make mine red, white and blue!
I love protein muffins. I eat them alone for a snack, but my favorite way to enjoy them is crumbled up and mixed into a smoothie (like I had this morning!).
They’re so easy to make, and even I can’t mess them up.
Red, White + Blueberry Protein Muffins (makes 10 muffins)
1 scoop vanilla protein powder (I used Sunwarrior)
1/4 c. coconut flour
2 T oat flour (I’m sure that you could sub out a different flour)
1 tsp baking powder
pinch of salt
1 T chia seeds
1 c. almond milk
1 egg
2 tsp coconut oil
1 dropper full of NuNaturals Lemon Stevia (if you don’t have this, you can use lemon extract and sweetener of your choice)
1/3 c. blueberries
1/3 c. strawberries, diced
2 T dried unsweetened coconut flakes
Pre-heat oven to 350˚ and line a muffin pan with 10 cupcake wrappers. In a medium sized bowl, mix the protein powder, both flours, baking powder, salt and chia seeds together. Mix the egg, coconut oil, stevia and almond milk in another bowl. Add wet ingredients to the bowl with the dry ingredients and stir will. Fold in the blueberries and strawberries. Pour the batter into each of the cupcake wrappers- filling each about 3/4 to the top. Sprinkle the coconut flakes over top of the batter after it’s poured into the pan- just a pinch or two for each muffin . Bake for 28-30 minutes, or until the coconut is golden brown.
These muffins are pretty small, dense and super moist. They don’t look like “normal” muffins due to the unconventional ingredients, but trust me- they taste good.
