WIAW 14: I ♥ Breakfast

Last Friday was one of those days where the best meal was the first one of the day. Don’t get me wrong- everything was delicious (because there’s no excuse for a sub-par meal!), but breakfast was just extra special.

Do you know what that is? Yup- it’s a sweet breakfast burrito. Or, technically, two sweet breakfast burritos. After making vegan breakfast burritos for Greg for the last month, I finally decided to try out a sweet version for myself.

And don’t worry- I’ll be back with the recipe tomorrow.

Lunch was also pretty darn delicious.

This was leftover taco “meat” (mashed kidney beans and tempeh with taco seasoning) over mixed greens, red onion, cucumber and tomato slices. It was all topped off with some homemade guacamole, salsa and crushed tortilla chips.

I also snacked on a few of these delicious Wasabeans that Laura sent me. :)

For a late afternoon snack, I made a mug of TVP “oatmeal” with some almond butter on top. Notice the puppy legs in the background?

Greg and I usually make pizza on Friday nights, but he had to work late. I saved the pizza idea for the next night and threw together a quick and tasty dinner:

That’s three Gardein “chicken” tenders (with dijon mustard and BBQ sauce for dipping), sauteed kale with nutritional yeast and a baked sweet potato.

I recently changed up the way I think about desserts. I don’t know about you, but I need to have something sweet after dinner. I found myself making a “healthy” dessert every night that easily added up to and extra 200-300 calories. Instead, I decided to designate Sundays as “dessert” night and enjoy a big bowl of ice cream (my favorite dessert) on that one night. On the other nights, I tame my sweet tooth with one of these:

One beautiful, crisp apple. Sometimes I get crazy and have a pear instead! Oddly enough, it’s enough to curb my sweet cravings. It also makes me appreciate my “dessert night” even more.

I also had a cup of the best tea ever:
