WIAW 22: On A Thursday

Why, hello! How’s your week going so far? (I don’t expect you to answer me.)

Let me just start by saying that I’m still drooling over these…


But, I’ll get back to those in a minute. :)

I usually shoot my WIAW photos on either Sunday, Monday or Tuesday but chose to take these last Thursday. It seems so long ago now! I know I said it before, but January just seems to be moving at a snail’s pace! Maybe that’s because it’s winter and I am just longing for sunshine and warm weather to come back.

I am finding a little bit of comfort in the forecast for the next few days, though!

It’s going to be in the 60s this weekend! I’d rather it not rain, but I’ll take the warmer temps!

Anyway, back to the topic at hand…

 Or rather, the pancakes.

I decided to forgo my usual oatmeal and make some delicious, fluffy pancakes for breakfast. I followed this recipe, but used oat flour instead of buckwheat. I made teeny tiny pancakes so that I could pile them up high and think that I was eating a whole mountain of them. That, and they just look even more delicious that way.

They are topped with frozen strawberries (defrosted and mashed) and a scoop of Chobani 0% plain yogurt.

Like I said before, I’m still drooling over the memory of them. And I almost just licked my computer screen.

Moving on!

I had an apple mid-morning (Pacific Rose are my new favorite!)

Lunch was also a winner.

I’m a big fan of breakfast for dinner, so why not have breakfast for lunch?

I burnt toasted two end pieces of Ezekiel bread that were hanging out in my freezer (one cinnamon raisin, one seven grain) and made an omelet (1 egg + 1/2 c egg whites and mixed veggies) and topped it with salsa. I like to call it an omelet pizza. :)

A little later on I had a snack that might not look pretty, but it tasted great!

1/2 c pumpkin puree + 1/4 c peanut flour + a splash of almond milk, topped with TVP.

Dinner was delicious. Since I train clients until at least 7:00 on Thursday nights, Greg usually takes care of dinner. He grilled up chicken, bell pepper, zucchini and onion with fajita seasoning and I put mine on top of a salad.

And then there was dessert.

The old standby: Celestial Seasonings Candy Cane Lane tea and a Concorde pear (the best pears in the world!)

If they ever stop selling these pears at Common Market, I will cry.
