WIAW 22: Once Upon On A Thursday

Why, hello! How’s your week going so far? (I don’t expect you to answer me.)

Let me just start by saying that I’m still drooling over these…


But, I’ll get back to those in a minute. :)

I usually shoot my WIAW photos on either Sunday, Monday or Tuesday but chose to take these last Thursday. It seems so long ago now! I know I said it before, but January just seems to be moving at a snail’s pace! Maybe that’s because it’s winter and I am just longing for sunshine and warm weather to come back.

I am finding a little bit of comfort in the forecast for the next few days, though!

It’s going to be in the 60s this weekend! I’d rather it not rain, but I’ll take the warmer temps!

Anyway, back to the topic at hand…

 Or rather, the pancakes.

I decided to forgo my usual oatmeal and make some delicious, fluffy pancakes for breakfast. I followed this recipe, but used oat flour instead of buckwheat. I made teeny tiny pancakes so that I could pile them up high and think that I was eating a whole mountain of them. That, and they just look even more delicious that way.

They are topped with frozen strawberries (defrosted and mashed) and a scoop of Chobani 0% plain yogurt.

Like I said before, I’m still drooling over the memory of them. And I almost just licked my computer screen.

Moving on!

I had an apple mid-morning (Pacific Rose are my new favorite!)

Lunch was also a winner.

I’m a big fan of breakfast for dinner, so why not have breakfast for lunch?

I burnt toasted two end pieces of Ezekiel bread that were hanging out in my freezer (one cinnamon raisin, one seven grain) and made an omelet (1 egg + 1/2 c egg whites and mixed veggies) and topped it with salsa. I like to call it an omelet pizza. :)

A little later on I had a snack that might not look pretty, but it tasted great!

1/2 c pumpkin puree + 1/4 c peanut flour + a splash of almond milk, topped with TVP.

Dinner was delicious. Since I train clients until at least 7:00 on Thursday nights, Greg usually takes care of dinner. He grilled up chicken, bell pepper, zucchini and onion with fajita seasoning and I put mine on top of a salad.

And then there was dessert.

The old standby: Celestial Seasonings Candy Cane Lane tea and a Concorde pear (the best pears in the world!)

If they ever stop selling these pears at Common Market, I will cry.

  2. Those pancakes look AMAZING! I should make smaller pancakes so I can stack them higher but I usually end up making 1 pancake that’s the size of my head! :)

    We’re also having temps in the 50s here. Still not warm enough for me but definitely better than freezing!

  4. Woooo weeeee! Girl, you’re giving me some pancake competition for sure! #pancakeporn!!!! Lovin’ the mountain of fluffiness you got going on there…totally drooling! And you KNOW pancakes are my all time favorite breakfast food…runny eggs come in at a close second though! ;)

    I’ve never tried a Pacific Rose before. I’m so bummed that we don’t have a better selection of organic produce around here. I have to drive to Whole Foods in Nashville for the good stuff. They have a few different varieties at Kroger, but they’re never organic. And I’m sorry, but there’s no WAY I’m touching a non-organic apple! :(

    And I’m totally with you on the month creeping by…I swear it feels like it should be the middle of January already! Gah, I’m so tired of being cold!

  7. Haha. I almost licked my screen too! Delicious-looking. And you definitely are right that stacked pancakes are the best form to come in… A way to a girl’s heart :)

    I would say that if I could eat anything (and I mean anything) for breakfast, I would probably pick belgian waffles from a diner.

    My favorite breakfast lately is the pan-lette. Flippin’ good. When I am able to flip it correctly. ;)

  13. Im excited for some warmer weather too! Winter is SO not my thing. Cinnamon raisin Ezekiel bread has been in my rotation all week, thanks to a trip to Trader Joe’s (I wanted to give that long lost friend a hug).

  14. Yummm!! I love pancakes with strawberry topping, so I’ll have to try it your way :) I would say my favourite breakfast is my mom’s pancakes. She makes really good, healthy ones. I miss them!

  15. I am a big egg fan. I literally eat eggs for breakfast 6 out of 7 days a week.

  16. At first glance I thought it was salsa and sour cream over your pancakes! Ha! Now that I know it’s strawberry they sound delicious! I like to switch up my breakfasts but one of my favorites are overnight oats in a jar. My hubby and I are doing a Paleo challenge just to see what it’s all about and I tried “no oat” oatmeal yesterday. Delicious!

  17. At first glance I thought your pancakes were topped with salsa and sour cream! Ha! Strawberries sound much better :-) I like to switch up my breakfasts often but overnight oats are a favorite of mine. Especially when enjoyed in an almost empty jar of almond butter. Yum!

  19. Oh wow, those pancakes look incredible! I always have a hard time deciding on my favorite breakfast food… I love them all! Oatmeal is a favorite for during the week, but on the weekends I love pancakes or waffles.

    I too usually have mexican food over a bed of spinach or lettuce instead of stuffed into a tortilla.

  21. I love making pumpkin pancakes on the weekend. Another recent favorite is sweet potato hash. But who am I kidding? I love all breakfast. I’ll have to try the strawberry yogurt combo next time.

  22. I think tofu scramble is still my favorite, but it’s a tough call – my moods change with food so often. :)

    I need to work out something like that with Shane on my late nights training. But…then again…I’d likely come home to either a) take out pizza or b) take out chinese every single time lol

  24. Wow, those pancakes look just incredible. I wish I could eat the whole stack right now! If I’m being healthy, my favorite breakfast food is Greek yogurt, but if I’m splurging, I too love pancakes!

  26. Those pancakes looks ridiculously amazing! When we go out for breakfast, I love fluffy scrambled eggs and homefries, but when I’m at home there’s nothing better than pancakes.

  27. I used to be a fan of pancakes and waffles but they tasted so dull and were way too sugary (not usually a problem but I was left unsatisfied). I usually go for some Greek yogurt combo but am going to try those pancakes soon!

  28. So, Lauren, I think I’m the only one that’s hoping our snow and cold weather will stay around here in Iowa for a bit longer. I don’t know where this sudden love came from, but I’m really sad that the snow is melting here! It’s January 9. :(

  33. It really is oatmeal. It really is. I am not a huge fan of anything else for breakfast. [Except cereal I guess....but I prefer to eat that at night. :)]

    When they stopped selling my favorite apples at Whole Foods, I think I really did get a little teary.
