WIAW

Hello, Wednesday. Nice to see you!

For today’s WIAW post, I’m taking it back to last Sunday. There wasn’t really anything special about this particular Sunday, except that it was the weekend… and that’s always just a little bit special. 

After teaching Spinning class, I came home ravenous and quickly made myself a bowl of perfect oatmeal.

I’ve been cooking my oatmeal a little different lately- using Holly’s method for banana custard oats (keep in mind, Holly is the genius that came up with beer crust pizza!). I still use my same ingredients:

But instead of boiling the water first and then adding in ingredients as I usually do, I put everything into a pot, stir it well, and let it cook (and stir it a few more times).

It just seems easier, and for some reason, it tastes better!

Along with my oatmeal, I had a cup of coffee using my new favorite mug! My very thoughtful friend Kelly sent it to me “just because” she knew I’d love it! And I do! I actually wash it by hand each time I use it, because it’s pretty much the only cup I want to drink from.

And yes, you can drink water from a mug. It tastes the same.

Isn’t the little design at the bottom adorable?

For lunch, I made my latest favorite salad:

Chopped up roasted Brussels sprouts mixed in (a little) maple syrup, liquid smoke, dijon mustard and lemon juice.

I also had a sandwich.

That’s a Rudi’s organic whole wheat (toasted) sandwich thin, lettuce, tomato, pickle, cucumber, brown mustard and a piece of Twin Oaks Fine Herb tofu.

One more thing:

I love these! I got this idea from the always creative Lindsay. I mix a cup of plain Greek yogurt with 1/2 c. almond milk, 1/2 c granola and a handful of fruit (this was chopped up cranberries and pears). I pour them mixture into an ice cube tray (plus part of a second one) and freeze. Once frozen, pop out the “fro yo” blocks and store in a container. Genius, I tell you!

A little later in the afternoon, I had some chopped carrots and apples.

I keep a container like this right in front of my fridge at all times, so that when I’m feeling hungry, it’s the first thing I go for. (I’m a recovering nut/trail mix addict!)

And for my “official” afternoon snack, a blueberry protein muffin topped with a bit of plain Greek yogurt.

Yummmmm.

Dinner was thrown together really quickly- using up a few items in the freezer that needed to be used up!

That’s a salad with a Sol Cuisine black bean burger and some tortilla “chips” (just cut up roasted corn tortillas). The dressing is a mix of plain Greek yogurt and salsa. Simple and delicious.

I’m sad to say that the dreaded day has come. My local organic co-op stopped selling my beloved Concorde Pears. Now I’m in search of a new pear love (I bought Bosc, but they’re not the same…).

Instead of a pear, my dessert was a cup of tea (I’ll let you guess the flavor) with a bit of almond milk and 50 calorie VitaCake.

Not quite as good as my juicy pear. But drinking tea from that mug made up for it. :)
