Wild About Blueberries

You may have already noticed this before, but I like blueberries just a little bit. Wild blueberries are my favorite, which we having growing in the woods near our house. In the summer, I take full advantage of blueberry season and pick all that I can fit into my big (blueberry pickin’) bowl!

When I heard that Heather was naming blueberries as her ingredient for “B” for the #MMAZ linkup, I immediately started thinking of possibilities. Unfortunately, my life is completely crazy right now and consumed with moving across the country, so recipe making just didn’t happen this past weekend. But, I did manage to look through my collection of blueberry-inspired recipes and found a few that I wanted to share today!

The first is a take on my lemon blueberry pancakes/protein muffins recipe, which I happened to enjoy for breakfast yesterday morning.

I cut the muffin up into pieces and topped it with Greek yogurt, sliced banana, and, of course blueberries. There’s just something about the combination of lemon and blueberry that is so delicious and refreshing, and makes me ready for summer?
Hmmmm… I’m thinking that some kind of lemon blueberry cocktail needs to be in the works….

Speaking of refreshing summer-like drinks, another blueberry favorite of mine is this wild blueberry pie smoothie.

The “pie” factor is created by the addition of flax and cinnamon- it’s wonderful! I like this for breakfast, a mid-afternoon snack, or even for dessert!

One final blueberry recipe that I love is so simple, yet I don’t have a good photo of it. This is a salad (on the bottom right) that I brought to a potluck last summer, and looking at it reminds me that I need to make it again- soon!

  1. I think it’s so cool that you have a blueberry patch near your house! The idea of picking your food right off the vine or out of the ground really appeals to me. I’m not a huge blueberry fan, but I’ve developed more of a taste for them in the last few years!

I loooooooove blueberries, in both sweet and savory (and occasionally strange) applications. :) Your lemon protein muffin inspired a lemon microwave concoction of my own, and now I’m thinking a little blueberry sauce might have to happen. Love ginger(bread?), lemon, and blueberries, too. What about a Ginger Blueberry Limoncello???

  4. I like blueberries too. NOt my total fave of the berries (blackberries are), but they can be so tasty with waffles & yogurt!

  5. I second the lemon-blueberry cocktail creation. :) I’ve never been blueberry picking, but I think I’d love it. Blueberries are one of my favorites! I mix them into my morning bowl of oat bran all the time.

  6. That protein muffin “bowl” always looks fantastic and I forgot how easy the ingredient list is! I want to pick fresh blueberries – that looks so fun. I know we’re supposed to plant fruit bushes in our backyard this year (once it stops snowing of course) and I think that’s one of them. Wouldn’t it be cool to get them from the backyard?

  7. The wild blueberry smoothie is such a pretty color. Whenever I add blueberries to a smoothie it always ends up a nasty brown color.

  11. Aww, the link to the salad ingredients didn’t work. Could you let me know what it is? I’d love to try that vinaigrette! Blueberries are one of my favorites when it comes to summer fruits…I love them ANY way! Ohhhh, now I’m thinking about your beet burgers and how I crumbled them up last year on a salad with blueberries…that needs to happen again soon! Or maybe with some blueberry cinnamon goat cheese! Have you seen that at Trader Joe’s? It’s amazing!
