You may have already noticed this before, but I like blueberries just a little bit. Wild blueberries are my favorite, which we having growing in the woods near our house. In the summer, I take full advantage of blueberry season and pick all that I can fit into my big (blueberry pickin’) bowl!
When I heard that Heather was naming blueberries as her ingredient for “B” for the #MMAZ linkup, I immediately started thinking of possibilities. Unfortunately, my life is completely crazy right now and consumed with moving across the country, so recipe making just didn’t happen this past weekend. But, I did manage to look through my collection of blueberry-inspired recipes and found a few that I wanted to share today!
The first is a take on my lemon blueberry pancakes/protein muffins recipe, which I happened to enjoy for breakfast yesterday morning.
I cut the muffin up into pieces and topped it with Greek yogurt, sliced banana, and, of course blueberries. There’s just something about the combination of lemon and blueberry that is so delicious and refreshing, and makes me ready for summer?
Hmmmm… I’m thinking that some kind of lemon blueberry cocktail needs to be in the works….
Speaking of refreshing summer-like drinks, another blueberry favorite of mine is this wild blueberry pie smoothie.
The “pie” factor is created by the addition of flax and cinnamon- it’s wonderful! I like this for breakfast, a mid-afternoon snack, or even for dessert!
One final blueberry recipe that I love is so simple, yet I don’t have a good photo of it. This is a salad (on the bottom right) that I brought to a potluck last summer, and looking at it reminds me that I need to make it again- soon!
